The Essentialist's Margarita
You'll need:
- 2 oz tequila (we're big fans of using a lightly aged reposado)
- 1.5 oz lime
- .5 oz simple syrup (equal parts sugar and water)
- .25 oz Cointreau (you'll want to use a quality orange liqueur, don't settle for a saccharine-sweet triple sec-- your morning self will thank you)
- pinch of sea salt
- .5 oz mezcal to float

- fistful of cilantro
- good pinch of sea salt
