Emilja's Kapusta

Wigilia is the traditional meal eaten by Polish people on Christmas Eve. Among the many dishes, you’ll always find kapusta. There are many variations on this cabbage dish—sometimes, it’s a soup! This is how our mug ops lead Emilja Tokarski’s family makes it. 

Kapusta

Ingredients:
1 head cabbage, cored & chopped into 1/2 inch strips
1 jar sauerkraut
1 onion, diced
1 package bacon, chopped into 1 inch strips
1 package mixed dried wild mushrooms

Preparation:
In a saute pan, cook bacon until the fat is rendered. Remove from heat before the bacon gets crispy. Add the dried mushrooms and onion to the remaining fat, cooking until the onion is soft. In a crockpot, add the bacon, the mushroom and onion mixture, cabbage, and sauerkraut. Place a tight lid on the crockpot and cook on low heat for eight hours, or overnight.
